Analytical controls

They are designed to assess:

  • quality and authenticity of products;
  • compliance with the parameters required by regulations or commercial requirments;
  • suitability of raw materials for processing;
  • presence of markers of microbial spoilage;
  • compositional and nutritional characteristics.

The activities cover the entire production chain from farm to fork in three main areas:

  • applied research
  • analysis and control of safety and quality.

In the specific area of the processing tomato the following activities are implemented:

  • research and development of best agricultural and pedo-climatic conditions (selection of varieties, cultural practices, harvesting methods, optimization of sustainability, etc.)
  • assessment of the quality of raw material and specificity for further industrial processing
  • optimization of technological conditions of the process and prevention of production defects
  • study and analysis of the best conditions for packaging and shelf life
  • study and qualitative characterization of finished products
  • research, development and enhancement of recovery of the solid waste production

  • quality: analysis and improvement of sensory characteristics
